Welcome back to your Midweek episode! 

Let me ask you something… Have you ever said that your health matters… but then your choices didn’t quite line up? That’s what we call cognitive dissonance.

Cognitive dissonance is that internal discomfort we feel when our actions don’t match our values. When you act in alignment with your values—even in something as simple as a meal—you reduce that internal tension. You move from conflict to clarity.

Midweek “Improvement Meal” – Red Lentil Pasta Bowl

Let me give you a simple, nourishing way to live this out today.

Why Red Lentil Pasta?

  •  High in plant-based protein 
  •  Naturally gluten-free 
  •  Supports steady energy (no crash!) 
  •  Quick + easy for midweek life 

Ingredients

  •  Red lentil pasta 
  •  Artichoke hearts (preferably in a jar / water)
  •  Cherry tomatoes (roasted or fresh) 
  •  Mushrooms (sliced) 
  •  Pumpkin seeds (pepitas) 

Optional add-ins (highly recommend):

  •  Fresh spinach or kale (for iron + fiber) 
  •  Garlic (immune support 💪) 
  •  Red onion (flavor + detox support) 
  •  Fresh basil or parsley ~ Varius Herbs ~ I always add in a couple of tsp's for each
  •  Lemon juice (brightens everything + aids digestion) 
  •  Top with drizzled Olive oil (healthy fats for absorption) 

Water Sauté Method

  1.  Boil your red lentil pasta according to package directions. Drain and set aside. 
  2.  In a skillet, add a few tablespoons of water (instead of oil). 
  3. Add:
    •  Garlic 
    •  Mushrooms 
    •  Red onion 
  4. Let them soften, adding small amounts of water as needed.
  5.  Toss in: 
    •  Artichokes 
    •  Tomatoes 
    •  Spinach/kale 
  6.  Add your cooked pasta and gently mix. 
  7.  Finish with: 
    •  Pumpkin seeds 
    •  Fresh herbs 
    •  Squeeze of lemon 
    •  Light drizzle of olive oil (optional)

Total Time: About 20 Minutes 

This right here… this simple bowl… This is improvement in action. Not complicated. Not overwhelming, but aligned.
